Wisdom Discovered on the Islands: Rock seaweed jelly
In an era where ingredient distribution has become more convenient, there are still foods that can only be truly understood and appreciated by visiting their place of origin. At EVETT, we draw inspiration from such local treasures.
Bawi-ot (rock seaweed) is a type of seaweed found in Sinan, Jeollanam-do, a region composed of approximately 1,000 islands. It grows attached to rocks, resembling clothing draped over them, which is why it is called "Bawi-ot," meaning "rock clothes." For generations, the island’s residents have skillfully utilized this precious gift from nature by making mook ( jelly) .
The dish introduced as "Exploration" features slices of amberjack marinated in yellow jasmine dressing, wrapped with pickled celtus root and Jeju citrus. Thinly sliced jellly is placed on top, accompanied by crispy Sinan shrimp and sea herbs sourced from Jeju Island. The dish is finished with blue jasmine flower dressing, adding a refreshing acidity and depth of flavor.
