Embarking on a New Tea Pairing Journey
The EVETT team recently ventured to 'Seola-dawon' in Haenam, a village at the southernmost tip of Jeollanam-do, to connect with a producer with over two decades of experience cultivating green tea fields. At EVETT, we believe in directly exploring the origins of our produce before embarking on any new project, and our preparation process for our tea pairing initiative is no exception.
Meeting tea producers in person provides a valuable opportunity to gather detailed insights into cultivation methods, harvesting times, and tea processing techniques. This knowledge is crucial for understanding how tea flavors and aromas are developed. Moreover, listening to the producers' stories enables us to develop a profound respect and appreciation for the cultural and historical significance of tea, as well as their unwavering dedication.
In April, we plan to actively participate in harvesting young tea leaves directly from the fields and engage in the tea-making process ourselves. This direct approach aims to provide us with a firsthand experience of the tea production process and a deeper understanding of the true value of tea.
