Welcome 2024, It’s been a busy few weeks for us, and what a joy it has been welcoming you all for your Christmas, New Years and all other special celebrations.
The Evett team have been putting together their goals, plans and projects for the coming year, and it’s already looking to be a very exciting 2024.

Monkfish season has hit the southern shores of Korea. Chef Joseph and the EVETT team have been getting ready to showcase this stunning fish with a new creation for the menu.
As monkfish has many centuries of dining history in Korea, for the core of our monkfish course we wanted there to be a big focus on using traditional techniques. Inspired by an ancient technique popular where the fish themselves were caught, our monkfish tail is first soaked in rice water to perfectly tenderize the protein, before being dried overnight. The next day it’s then slowly roasted on the bone over a fire of applewood logs and traditionally made charcoal. Finally, we sourced razor clams local to the fish, and paired with fresh chestnut, confit yuja, and preserved maesil.

Following the successful EVETT X LURRA collaboration in October, the two teams are coming together again, but this time in Kyoto.
Chef Joseph and Alex will be traveling to Japan later this month for a two night only event, connecting Japan and Korea. This special menu will feature a number of new dishes from both restaurants, showcasing ingredients local to Kyoto with innovative techniques from both restaurants.
