As we enter the last month of the year, the team at Restaurant Evett looks back to what was a very special year. For us, 2023 saw the relocation of the Restaurant as well as many exciting events, new dishes, new friends and new faces. As always we reflect that the restaurant would not be the same without the influence of each and everyone of you and we would like to end the 2023 with nothing but gratitude to those who have joined us on this journey over the years.
Thank you to the Evett team for their continuous hard work, as well as to the producers, farmers and suppliers who make Evett the place it is today. We sincerely wish all of you a great end to the year, and hope 2024 brings everything you could hope for.
The Team Met a Charcoal Master in Jirisan Mountain
Earlier in the month The EVETT team joined charcoal master 송인용 who has been making charcoal for more than 20 years at the foot of Jirisan Mountain in Sancheong-gun, Gyeongsangnam-do.
The charcoal is produced through a special process of stacking oak trees in kiln caves made of granite and red clay and burning them for a full day at more than 1,000 degrees. The caves are blocked off and left for several days before the charcoal is carefully removed and sorted. The residual heat left behind in the cave is then used as a sauna by the surrounding locals and visitors.
Charcoal (숯) means ’fresh power‘ in Korean, and it’s use for natural purification has long been used throughout Korean life. As well as using the charcoal as fuel for our fire, we now use it to purify the water used to cook our native rice serving and our beef is seasoned with salt that was roasted in the heat of the cave.
This month the team has been very excited to see Yuja season in full swing. Although the season is short, we have made sure to showcase the freshness and distinct aroma of the citrus in our pre-dessert. The whole of the Fresh Yuja from Goheung, Jeollanam-do is used in this refreshing dish on our menu, so make sure you catch it before the season is over.
A Special Pairing for Christmas Events
Evett’s head sommelier Shin Hochul is preparing for the holiday season with a special christmas wine pairing. The pairing will only be available on the 24th & 25th this month, so make sure you get booked in soon to catch it.
