Traditionally, bracken is gathered from the wild in mountainous and forested areas. Harvesters need to be knowledgeable about the right time and method to collect the shoots to ensure sustainability and prevent damage to the plants. So by joining teams, and using the expert knowledge of the locals, we eagerly seized the opportunity to partake in this special tradition.
Picking the tender Bracken one by one gave us the chance to truly appreciate the final moments of spring and look forward to the bounty Summer is about to bring.

Meeting the Masters of Jeollanam-do
|
|
|
Jeollanam-do is renowned for its diverse and flavorful cuisine, with many master chefs dedicating their lives to preserving traditional dishes. The EVETT team embarked on a journey across Jeollanam-do to meet these culinary masters, hear their stories, and learn their techniques.
From Yeosu to Gokseong to Naju, the team met remarkable chefs such as Jeong Seon-sim, who specializes in marinated crab; Kim Hye-sook, renowned for her traditional crispy seaweed; and Cheon Soo-bong, an expert in royal sweets and bellflower root preserves. These masters have spent decades preserving and evolving their culinary heritage.
The journey provided the EVETT team with invaluable insights and ideas, highlighting the importance of tradition and innovation in creating exceptional food. We extend our heartfelt thanks to Jeong Seon-sim, Kim Hye-sook, and Cheon Soo-bong for sharing their knowledge and skills. |

2026 World Food Travel Forum

As Korean cuisine gains global recognition, efforts are underway to bring the 2026 World Food Travel Forum to Jeollanam-do. Among those advocating for this initiative is Chef Joseph from EVETT, who participated in the appointment ceremony and the first planning meeting as a member of the organizing committee last month.
The World Food Travel Forum is an international event where food tourism experts from around the world gather to discuss the integration of cuisine and tourism. To ensure the successful hosting of this event, Chef Joseph is collaborating with the Jeollanam-do Tourism Foundation on various projects aimed at promoting the region's culinary culture globally and boosting the local economy and tourism industry.
We eagerly anticipate the day when Jeollanam-do's cuisine and culture achieve even greater global recognition. |
